How much effort & cost required & any significant merit for a standard road car?
Also looking like the Demon is gonna need new disks, pads & possibly calipers, so what are the options ranging from good quality, low cost to significant upgrade?

Standard drums will more than suffice on a road car. Rear disc conversions aren't cheap, even when using axles from the breakers as they are usually rusted/seized and require a fair amount of work to get them up to spec.
I'd stick with what you have and perhaps upgrade to a better pad on the front...
