Bike Carb shopping

Starting to shop for my bike carb and just wanted to get some advice. I have noticed that the most common carb is the CBR600 is this due to compatibility or ease of installation or is it just a common bike in the UK? could I put a 750 or 900cc carb or what about an 1100cc? these are more common here in canada. Any advice on this would be great. Also looking a my carb I see that there are a lot of hoses and some wires do I still need to use these on the new carb or not? Should I be looking for older carbs or if I find a good deal on a new one will it still work? Thanks and Cheers from Canada
