So in theory I could just run a long wire from the connector plugs centre wire (while it is still plugged into the lambda) into the car's cockpit, plug in my multimeter and keep an eye on it...

At the three wire plug for the lambda should I just juryrig a wire to the middle connector then earth that via a multimeter to get the voltage concerned.
