I'd say your past the point of "considering" putting bike carbs on if you have all those parts already
I've heard you need two Fuel pressure regulators in series to drop the pressure low enough to run the carbs although I'm no expert so I'll let someone clarify that.

I don't suppose you know what type? As I've just looked at universal ones

Any adjustable universal one should be fine so long as it can drop the pressure low enough, I think for the first in the series you have to have something like this:
