Cutting braided hose

Just how easy is this to di, can I do it with a stanley knife, or will some more hardcore tool be required?

You will need to wrap the hose in tape and then either use a very fine hacksaw blade or a dremel type cut-off tool. Stainless braid is very sharp, so wear thick gloves.

What type of hose is it? Brake?

Cheers, doesn't sound like too much of a faff, can I sand/file the cut ends less sharp?

It will be an oil hose.

The ends will always be sharp, The end fitting should cover them up.
Make sure you clean the swarf out of the hose after cutting.

Oil hose will be quite difficult to cut, most places that supply it can cut it for you.

I find that cable cutters (the large ones where the blade overlaps, not snips where they just meet) are ok for cutting the small stuff. Bigger stuff cuts quite well in a chop saw if you tape it and ram the saw down as quickly as possible.
